So, I need to take off the plate that the T-5 sits on but i am worried I need to support the tranny to do so. Is that true? Can I simply remove it and clean up the mess I made and then bolt it back on?

I would support it
 
What I do is put a floor jack under the tail shaft to hold it when you take the skid plate off.
 
When I dropped the skid plate I braced both sides with jacks, dont think you need to brace both sides but I had an extra jack.
 
When you remove all the bolts, go easy, since rust and :dung: can build up on the threads and they can strip out.
